Every early September the smell of chile roasting fills the air at local farmers markets and grocery stores. It is a wonderful end of summer scent and you have to make space in your freezer so that you can stock up on enough chile to last you for the whole year. It is a New Mexico tradition. It has to be Hatch Green Chile(meaning that it came from Hatch, NM where green chile grows the best). Do you smell it yet?

Everyone gets a little giddy about freshly pealed chile!
That doesn't mean it is an easy process. If you get a whole gunny sack, you will be pealing all day! We just got a small pack this year.
Put your gloves on, peal the skins, remove the stem and as many seeds as you can.
Yum, you know this is making your mouth water!

mmmm! I miss that smell! But did find some NM Hatch chiles at our local grocery. Hurray!
